<li>4 sweet ears of corn, fresh</li>
<li>4 Roma tomatoes, seeded and diced</li>
<li>1 red pepper, diced</li>
<li>1 medium red onion, diced finely</li>
<li>1/2 chili pepper, diced finely (to taste)</li>
<li>1-2 limes, juiced</li>
<li>1-2 cloves of garlic, minced</li>
<li>1-2 tsp salt (to taste)</li>
<li>Pinch of fresh black pepper</li>
<li>1/4 -1/2 cup fresh cilantro, chopped finely</li>
</ul>
<p>In a medium bowl, mix together the tomatoes, onion, red pepper, and chili.  Take the corn off the cob (raw) and add it to the mixture. Add the lime juice, salt, pepper, garlic, and cilantro. Taste and adjust the seasonings. Refrigerate for 2 hours and serve. Serves 8-10.  Good to serve with chips or as a side dish with salmon or quesadillas.</p>
